how do you disable security cameras without it being noticed?
Im curious because as of right now im training in security at a local department store and id like to see how people in my store can disable the camera without really touching it or pulling the power cable and no visible damage.

I’m assuming that the video cameras are monitored by your security department at least part of the time. If that is the case, it would be hard to tamper with or disable the camera without it being noticed fairly soon. Also, many camera systems have what is known as "video loss detection" that alerts security when a camera is tampered with.
You see things in movies about people disabling cameras by inserting a recorded image, etc. I have never heard of this happening in real life and I have been in the security business for 35 years. At best, people will try to cover up a camera or vandalize it, but that is quickly discovered.
Also keep in mind that, in a well designed camera system, there is always more than one camera viewing the same area.
Throw something over it, or carry a small paintball gun pistol and shoot the lens. Also, if any of the cameras are on a wireless network, you could use a PDA and run certain tools to take the network to them down. They would still appear to be up, the display screens would have the last thing that the camera saw on them. If it’s an analog camera, running over CCTV wires, you would pretty much have to compromise the wiring somehow.
Well … to do this, the guy should be really smart and experienced .. one method would be, saving a video file from the camera, and then stream it to the receiver controller … another one would be to print a picture that would look like there is no action on the place, and put that picture in front of the camera … that would be a lot of work to get that kind of picture .. but it’s possible
